Healthy Double Chocolate Muffins!

Happy New Year, everybody!

In celebration of the new year, today I have another yummy treat for you!  Double chocolate muffins.  Not just any ordinary double chocolate muffins, either.  Some consider this recipe healthy.  *gasp*  Healthy chocolate muffins??  But Hanna!  There's no such thing!  Well, think again.  Using ingredients such as oats, applesauce, and fat-free yogurt, these muffins can put a guilt-free smile on anyone's face.

Double Chocolate Muffins

Ingredients

  • 1 & 3/4 cups old-fashioned oats
  • 3 egg whites
  • 3/4 cup unsweetened cocoa
  • 1/2 cup unsweetened applesauce
  • 1 tsp. vanilla extract
  • 1/2 cup plain low-fat Greek yogurt (regular fat-free yogurt works, too)
  • 1/2 tsp. cream of tartar
  • 1 & 1/2 tsp. baking powder
  • 1 & 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup hot water
  • 3/4 cup raw sugar
  • about 1/2 cup chocolate chips (dark chocolate is the healthiest way to go) *optional*
  • cupcake liners
Directions
  1. Preheat oven to 350 degrees Fahrenheit.  Line two (12 cup) muffin pans with cupcake liners and set aside.  You can also line two (24 cup) mini cupcake tins.
  2. In a blender, mix all of the ingredients together, except the chocolate chips.  Blend until oats are ground and mixture is smooth.
  3. Evenly distribute the batter into the lined pans. (I usually fill my cups about 3/4 of the way full.)
  4. If desired, sprinkle a few chocolate chips on the top of each muffin.  This is completely optional.  If you're going for healthy, you may want to leave this step out.  But if you're just making them for a treat, let me tell you from personal experience that the chocolate chips add the perfect amount of gooey chocolatey goodness to this recipe! :P
  5. Bake for 12-15 minutes or until a toothpick comes out clean.  (My mini muffins took 13 minutes and my big muffins took 15.)
  6. Let the muffins cool before removing them from the pan
  7. Enjoy your little bites of heaven!!

These muffins are delicious!  I definitely recommend giving them a go.  Plus, it doesn't get much easier than piling a bunch of stuff in a blender, does it?  These would make a yummy breakfast or a great on-the-go snack.  Feel free to experiment.  Can you make this recipe even healthier?  If you do, please let me know!
